Authentic Greek Salad



I have gotten behind in sharing recipes, but this one is a summer favorite at our house. My aunt received this from some of her Greek friends and it is awesome!

Greek Potato Salad (the base):

6 large potatos, boiled in jackets, then peeled and cubed
6 green onions, finely chopped
1/2 cup fresh parsley, finely chopped
1 1/2 cups mayonaise
Salt to taste

Mix all ingredients together in a large bowl.

Dressing for salad: mix 1/4 cup vinegar and 1/4 cup oil together. Add 1/3 cup finely chopped parsley. Shake well.

For salad:
2 cups shredded lettuce
1 cucumber, sliced
1 can olives, drained
1 tomato, chopped
1 lb shrimp, peeled and steamed
3 green onions, chopped

To assemble salad:
Line a platter with the shredded lettuce. Mound the potato salad onto the middle of the platter. Cover with the cucumber, olives, tomato, onions, and shrimp.
Dizzle with dressing.

Without the shrimp, this is a thrifty summer recipe. With the shrimp, it is a treat!
